Tzimmes with Dumplings

Bulbul's Kitchen

Thanks to Melissa and (ultimately) to her Mom for this recipe. Melissa takes the honour of transforming this into a vegetarian dish so that everyone can enjoy it. If you're serving this at a party, do as Melissa does: say "It looks really disgusting, but it tastes really good."

  • 2 sweet potatoes, cut into chunks
  • 1 bag shorty carrots or 7-8 whole carrots cut into chunks
  • 1/2 cup brown sugar
  • 1/2 lb. dried fruit: prunes, raisins, apricots, cranberries, etc.
Put in an oven-safe pot and add just enough water to reach half-way to the top of the vegetables. Bring to a light boil on stove top and simmer for 20 minutes, but in the meantime start on the dumplings:

  • 2 1/2 cup flour
  • 1 minced onion
  • 2 teaspoons salt (Melissa actually uses less)
  • 2 teaspoons pepper (ditto)
  • 3 tablespoons margarine
  • 1 cup cold water
While the tzimmes is heating on the stove, mix together above ingredients except water. Add cold water gradually until mixture sticks together.

Make small dumplings and place them on top of items in pot. Spoon liquid over it. Bake in oven for 2 to 2 1/2 hours at 325 degrees Fahrenheit.

¡Enjoy! It also freezes well.
